Chorizo Pasta

Serves 4

Preparation and Cooking Time: 25 Minutes

This is one of my staple dishes. It’s rich, creamy and absolutely delicious, perfect for a midweek treat. Described by my partner Rosie as “addictive”, it is certainly a spectacular flavour explosion. Disclaimer: If you’re counting calories this isn’t for you.

Ingredients

500g Dried Pasta

Half Chorizo Ring

200mls Double Cream

100mls White Wine

1 Red Onion

Approximate Cost of Dish- £4

Method

1 Dice your onion and chorizo, add to a wok on a medium heat and sauté for around 5 minutes (this means to fry very lightly).

2 Add your wine to the onions and chorizo and cook until the wine has cooked off.

3 Whilst this is happening, boil a saucepan of water and cook your pasta. Dried pasta will take 10-12 minutes to cook. Drain when ready.

4 Add your double cream to the wine, chorizo and onion and simmer until the cream turns thick. If it becomes too thick add some of the water from your pasta to loosen it. It should be think enough to coat the back of a spoon.

5 Add the drained pasta to the sauce, mix and serve! Add salt and pepper to taste.
