Spatchcocking your chicken means that it will cook evenly, without leaving you with some undercooked bits and some overcooked bits. This method is ideal for barbecuing or for your Sunday roast. Follow this step by step guide to never have an overcooked roast again!
Method
1.Turn your chicken over so the breast is on the chopping board.
2.Locate the backbone of the chicken and cut down it on one side.
3. Follow the other side of the backbone and also cut down until you can remove the backbone.
Find the wishbone and cut it so that the chicken will flatten.
You’re done. It’s as simple as that.
