Oozy, gooey and slightly spicy this is a real comfort food for those cheat days. Formed in the dungeons of a castle that I worked in (yes, the kitchen was actually in a dungeon), this has been served to thousands of wedding guests and is always a real crowd pleaser.

4 Chicken Breasts
100 grams Cheddar Cheese
40 grams Mozzarella
100 grams Chorizo
1. Blitz together your cheeses and chorizo using a food processor.
2. Butterfly your chicken breast by splitting it in half and opening it out like a book.
3. Add the mixture of cheeses and chorizo to the middle of the chicken and fold over (put any leftover mixture on the top of the breast).
4. Cook for around 30 mins and serve.
